Chickpea, Cucumber and Kale Salad with Lemon-Tahini Dressing
Ingredients
1/2cup tahini
1/2cupwater
1lemonzest and juice
2clovesgarlicgrated
1tsporegano
1/2tspdried cumin
pinchcayenne pepper
coarse salt and freshly ground black pepperto taste
1bunchkale or spigarello
1headlettucechopped. Or baby greens
1cucumberchopped
1carrotjulienned
1/2red onionsliced
2Celery stalkschopped
1/2cupcherry tomateshalved
115 oz. canchickpeasdrained
Instructions
Combine the tahini, water and lemon juice in a bowl and whisk until well combined. Grate in the garlic and then add the herbs and spices. Mix well and taste for any seasoning adjustments.
Combine all the salad ingredients in a large bowl. Add the salad dressing and toss.
