Romaine Lettuce Wraps

Ingredients
  • 4 Romaine Lettuce leaves
  • 1 Filipino Long Eggplant
  • 2 carrotsshredded
  • 5-10 cherry tomatoes
  • 1 Japanese Cucumber
  • 1stalk green onion
  • half avocado
Sauce
  • 1 tbs hoisin sauce
  • 1tbs chopped fresh parsley
  • 1tbs soy sauce
  • 1tbs sesame oil
  • half lemoncut in wedges
Instructions
  1. Dice all of the vegetables except the avocado and carrots. Follow the measurements to make the sauce, and sauté the vegetables with a teaspoon of olive oil and the homemade sauce. Save 2 tablespoons of sauce for the end. Spoon sautéd vegetables in your lettuce wrap, and garnish with avocado, shredded carrots, and radish slices. Add a teaspoon of sauce and squeeze a little lemon to each lettuce wrap.
