Za’atar Roasted Pumpkin Salad
Za’atar is a spice blend from North Africa with delicious ingredients such as sesame seed and oregano. Great for mixing with oil for a dip or roasting vegetables. We like the contrast with the sweet and creamy pumpkin, once roasted becomes crispy on the outside.
Ingredients
  • 1/4pound kabocha
  • 1/4pound arugula
  • 1/4pound tomaotes
  • 1piece lemon
  • 1tsp za`atar spices
  • 1/4tsp chili flakes
  • 1tbsp almonds
  • 3tbsp olive oil
  • 1pinch salt
  • 1pinch pepper
Instructions
  1. Preheat oven to 400 F. Cut Kabocha into bite size chunks. Best way is to cut top and bottom off, scoop out the seeds, and cut into slices then chunks.
  2. Toss kabocha chunks with 1 tablespoon olive oil, avocado oil, or melted coconut oil or butter with a pinch of salt and pepper and roast for 30-45 min at or until fork tender.
  3. Drizzle the rest of the oil and spices over kabocha, tomatoes, and arugula. Toss and enjoy!
