Aloha and thanks for tuning in! We’re here to bring you great tasting fresh local produce and this week we want to let you know what you’re getting, so here it is! Pacific Gateway farmers will be providing string beans, eggplant, and grape tomatoes, Ho Farms brought us swiss chard and collards, so you’ll be getting one or the other, Kama`aina Land Plant Rentals had avocados, and Mari’s Garden provided hydroponically grown organic lettuce. Have you thought about what to do with all of this? Here are some suggestions:
Classic Caponata This is a great way to use your eggplant and it’s a perfect potluck dish.
Potato and Green Bean Salad Another great potluck for days on the beach or in the park.
Sauteed Swiss Chard with Balsamic Vinegar easy!
Spicy Collard Greens with Tomato, Garlic, and Onion you won’t be getting 3 lbs of greens this week, so you should adjust the recipe for about a half lb.
