This week’s bag features Organic Baby Greens! Baby greens are any green that is harvested before the plant is fully grown. Greens harvested in this way can include spinach, kale, arugula, mustards, lettuces, pac chois, etc. Some studies have shown baby greens have more vitamin C, carotenoids, and flavonoids than mature leaves. While the evidence is clear that the very youngest leaves, called micro-greens, definitely do have higher levels of nutrients than mature leaves, even if baby greens do not have a significant difference, they are still super healthy for you!
