Mele Kalikimaka from Oahu Fresh! We hope you are enjoying the holiday season and looking forward to a new year of eating healthy local produce! This week’s bag has great local veggies and fruit to look forward to as well. This week you’ll be receiving arugula, tomatoes, long squash, sweet potatoes, sweet thai basil, and papayas. For inspiration on what to do with it all, look no further! Below you’ll find our suggestions, and please send us your ideas also!
Green Curry Squash Soup This recipe calls for summer squash but long squash would work just as well.

Asian Pear, Celery, and Arugula Salad Light and refreshing, this would be a great beginning or end to dinner, and also a nice brunch dish.
How to Make Dried Papaya I added this link because although I love fresh papaya (with lemon, lime, or lilikoi squeezed over it!) sometimes I crave something else or have a lot of other fresh fruit in the house. Here you can find out how to dry or dehydrate fresh papaya and make your own dried fruit that can then be added to granola or eaten alone.

This week’s recipes will focus on simplicity, because at this time of year we are all very busy and don’t have much time or energy to spend in the kitchen, even though we want to create healthy, great tasting food. So here are a few ideas to help you reach that goal and still have time and energy to wrap those last few gifts or head out to that holiday party!
Eggplant and Onion Noodle Salad with Warm Soy Rice Vinaigrette Easy, and you probably have almost everything on hand already. If you have time you could salt and drain the eggplant the night before.
Simple Braised Greens Serve with eggs, polenta, or salmon for a filling meal.
Sherry’s Greek Pasta Salad Make ahead and you have lunch or dinner for the next day.
Tomato Salsa with Cucumber Chips Take with you to the office party or neighborhood potluck!

Here are a few ideas to mix and match your produce for some great fresh dishes.
Quinoa, Corn, and Tomato Salad with Chive Oil You can make the chive infused oil or just use olive oil and add some chopped fresh chives. Quinoa is very good for you and has a nutty flavor. It’s packed with vitamins and amino acids. You could saute your kale to go with this dish for the ultimate vitamin packed lunch or dinner!
Sauteed Cherry Tomatoes with Chives Easy! Halve the recipe to use only your Oahu Fresh tomatoes, or buy more to do the whole thing.
Garlicky Kale with Corn Easy and looks delicious.
How to Use and Eat Fresh Lilikoi Several tips for using your fresh lilikoi. I hadn’t thought to eat it with yogurt but I’m going to try it out-I bet it’s fantastic!
Grilled Pineapple Just grill all of your pineapple at once while you’re making dinner and eat it for dessert, then with yogurt at breakfast or lunch the next day!

Shrimp, Grapefruit, and Spinach Salad You can purchase spinach at the market for this salad, or you could use your fresh baby arugula or nalo greens.
