Combine all the vinaigrette ingredients into a Mason jar, tighten the lid, and shake well until combined. Remove the lid and adjust for your preferred flavor, tweaking with a little extra salt, sweetness, or more olive oil.
Cut the watermelon into generous chunks and place into a small bowl; toss with a drizzle of of the vinaigrette.
Lightly dress the greens with the vinaigrette, then add in a generous handful of roughly chopped dill. Layer in the watermelon, top with more greens, and finish with an additional sprinkling of fresh dill and any other of your favorite salad toppings.
