Chickpea, Cucumber and Kale Salad with Lemon-Tahini Dressing
Ingredients
  • 1/2cup tahini
  • 1/2cup water
  • 1 lemonzest and juice
  • 2cloves garlicgrated
  • 1tsp oregano
  • 1/2tsp dried cumin
  • pinch cayenne pepper
  • coarse salt and freshly ground black pepperto taste
  • 1bunch kale or spigarello
  • 1head lettucechopped. Or baby greens
  • 1 cucumberchopped
  • 1 carrotjulienned
  • 1/2 red onionsliced
  • 2 Celery stalkschopped
  • 1/2cup cherry tomateshalved
  • 115 oz. can chickpeasdrained
Instructions
  1. Combine the tahini, water and lemon juice in a bowl and whisk until well combined. Grate in the garlic and then add the herbs and spices. Mix well and taste for any seasoning adjustments.
  2. Combine all the salad ingredients in a large bowl. Add the salad dressing and toss.
