Citrus, Curry, Cashew Chicken Salad
Ingredients
  • 1cup whole plain yogurt
  • 1tsp curry powder
  • 1 lemonfreshly squeezed
  • 2 roasted chicken breastscoarsely diced
  • 1cup red cabbageshredded
  • 2 green onionschopped
  • 1/2cup celeryfinely diced
  • 1/2cup cashewsroasted
  • 3peeled sections citrusorange, tangerine, tangelo, mandarin etc
  • coarse salt
  • 2 pitashalved
Instructions
  1. In a large bowl, mix together the yogurt, curry powder and the lemon juice.
  2. Mix in the chicken, cabbage, green onions, celery and cashews. –
  3. Add the citrus sections and season to taste with salt and pepper.
  4. Serve in pitas
