Citrus, Curry, Cashew Chicken Salad

whole plain yogurt

curry powder

lemon
freshly squeezed

roasted chicken breasts
coarsely diced

red cabbage
shredded

green onions
chopped
1/2
cup
celery
finely diced
1/2
cup
cashews
roasted
3
peeled sections
citrus
orange, tangerine, tangelo, mandarin etc
coarse salt
2
pitas
halved
Instructions
In a large bowl, mix together the yogurt, curry powder and the lemon juice.
Mix in the chicken, cabbage, green onions, celery and cashews. –
Add the citrus sections and season to taste with salt and pepper.
Serve in pitas
