Ingredients
  • 1tbsp olive oil
  • 1piece onionchopped
  • 2stalks celerychopped
  • 8ounces vegetable stock
  • 1tsps salt
  • 1tsp pepper
  • 1bunch kalechopped
  • 1piece tomatochopped

  1. Heat the olive oil in a medium-sized pot.
  2. Sauté the onion and celery over medium-heat, about five minutes, to release flavors.
  3. Reduce heat, stir in kale (note: will shrink a lot).
  4. Add stock, salt and pepper.
  5. Cook, covered, on medium heat for 30 minutes, stirring every 10.
  6. Add tomato during the last 5 minutes.
