Papaya Chia Pudding
Serve this light dish as is or with any toppings you have in the pantry (seeds, nuts, berries, etc.)
Ingredients
  • 1ripe papayahalved, with seeds discarded
  • 1/2cup chia seeds
  • 1cup coconut milk
Instructions
  1. 1. In a small bowl combine both the coconut milk and chia seed – use a fork or small whisk and beat gently to mix the coconut milk into the chia seeds then leave to thicken for 10 minutes.
  2. 2. Use a spoon to scoop out pieces of papaya and set aside.
  3. 3. Layer the bottom of a jar or glass with half of the mashed papaya then pour the gelatinous chia seed mixture on top.
  4. 4. Finally add another layer over the top of the chia pudding and feel free to sprinkle on some chopped papaya as well.
  5. 5. Leave in fridge for pudding to thicken to your desired consistency. Serve as is or add on any toppings you may have in your pantry.
