Pineapple Salsa
  • 1cup pineapplefinely chopped
  • 1medium tomatofinely chopped
  • 1/4cup red onionminced
  • 1-2 hot chili peppersseeded and minced or one 4 oz. can chopped mild green chilies
  • 1-2Tbsp lime juiceor lemon juice
  • 1/4cup cilantrominced
  • 1-2 green onionsminced
  1. Combine all the ingredients in a small serving container and stir together.
  2. Or leave the ingredients in larger chunks and prepare in a food processor. Pulse on and off until finely chopped but not pureed; then transfer to a serving container.
