A mini-onion that is perfect for bunching or pickling, the purplette matures early and turns to a pastel pink when cooked. They can be picked early similar to maturity of a scallion, or later, maturity similar to a pearl onion. Their flavor is mild and sweet, far less pungent than it’s related red onion. The green hollow tops are also edible but lack much flavor compared to the bulb. Multiple shoots grow from one bulb.
Preparation:
These onions are able to be prepped in a variety of ways, from roasted, charred, pickled or raw. They do well served and prepared as a savory vegetable rather than simply a seasoning.
