Ingredients
- 1/4 pound kabocha
- 1/4 pound arugula
- 1/4 pound tomaotes
- 1 piece lemon
- 1 tsp za`atar spices
- 1/4 tsp chili flakes
- 1 tbsp almonds
- 3 tbsp olive oil
- 1 pinch salt
- 1 pinch pepper

Instructions
- Preheat oven to 400 F. Cut Kabocha into bite size chunks. Best way is to cut top and bottom off, scoop out the seeds, and cut into slices then chunks.
- Toss kabocha chunks with 1 tablespoon olive oil, avocado oil, or melted coconut oil or butter with a pinch of salt and pepper and roast for 30-45 min at or until fork tender.
- Drizzle the rest of the oil and spices over kabocha, tomatoes, and arugula. Toss and enjoy!
