October 5th & 6th Bag!

October 3, 2011 by Oahu Fresh Leave a Comment

Aloha everyone!  This week’s bag is shaping up:  we’ve got arugula, lettuce, tomatoes, avocados(organic!), chinese parsely, and Maui onions.    Here are  few recipes:

Spicy Chicken & Arugula Sandwich I just ate dinner but this recipe is making my mouth water…

Open Face Brie, Apple, & Arugula Sandwich uh oh!  delish…

Greek Salad Instead of Romaine, try this salad using your hydroponic lettuce.  Different  texture= fun in the mouth!

More to come!

Bag Items for September 28 & 29

September 27, 2011 by Oahu Fresh Leave a Comment

Aloha Oahu Fresh members!  We are really trying to get some late summer melons in this week’s bag; as of this posting, it’s still up in the air but we’re keeping our fingers crossed!  Your bag will have lettuce, tomatoes, nalo greens, long beens, and sweet potatoes though.  Here are a few ideas to keep using your local produce in fun and delicious ways:

Piele (Mashed Sweet Potatoes in Coconut Milk)

Long Beans with Egg Easy!  Great for any meal, and you could add a salad of Nalo Greens to round it out.

Thai Lettuce Wraps Whenever we have extra salad greens I try to think of other ways to use the hydroponic lettuce.  It holds just about anything, so try these veggie wraps.  There seem to be alot of ingredients but it’s mostly things you probably already have in stock.  If not, substitute at will!

Emeril’s Mixed Baby Greens with Goat Cheese and Balsamic Lager Dressing Sometimes you want to make a really spectacular dressing…this is one!

Oven Roasted Tomatoes Stuffed with Goat Cheese In case you have leftover goat cheese from the mixed greens salad!

Aloha Members!  This week’s bag has us really excited…lettuce, tomatoes, round eggplant, cilantro, avocado, braising greens, and canteloupe…WOW!  We hope you enjoy it, and please send us your recipes and meal creations.

If you’re stuck on what to do with your produce–here are a few ideas:

Eggplant Curry

Tomato and Eggplant Tian Tian refers to the cookware but the style is simply layered veggies.

Tomato Cilantro Salad

White House Garden Herb Roasted Chicken and Braised Greens Well if Michelle’s doing it…. 😉

Bag Items for September 14 & 15!

September 12, 2011 by Oahu Fresh Leave a Comment

Aloha Oahu Fresh Members!  This week’s bag will have lilikoi from the North Shore, radishes and sweet potatoes from Kahuku, Kahalu`u lettuce, Hau`ula tomatoes, papaya from Kahuku and Nalo tatsoi.  We hope you’ve enjoyed a summer full of local fresh vegetables, and if you are new, we hope you’ll enjoy the next few weeks of post summer produce!

Some ideas for using your island fresh produce:

If you’ve been making lots of salads and are looking for a new, easy dressing to make, try this one:  Walnut Viniaigrette The ingredients are few, and it looks simple.

Salmon Chowder with Cauliflower and Spinach This recipe would be great with spinach but you could use your tatsoi also!

Radishes, butter, and salt on bread

Radish and apple salad I know, apples aren’t local!  But this is a good way to use your radishes and is a unique salad to try.

Canteloupe Ice Scroll down for the canteloupe substitution…

Prosciutto, melon, and mozzarella skewers

Lilikoi Chiffon Pie

Tatsoi with Garam Masala For an Indian inspired side dish, or add mushrooms or chicken for a meal.
