Ingredients
- 1/2 cup tahini
- 1/2 cup water
- 1 lemon zest and juice
- 2 cloves garlic grated
- 1 tsp oregano
- 1/2 tsp dried cumin
- pinch cayenne pepper
- coarse salt and freshly ground black pepper to taste
- 1 bunch kale or spigarello
- 1 head lettuce chopped. Or baby greens
- 1 cucumber chopped
- 1 carrot julienned
- 1/2 red onion sliced
- 2 Celery stalks chopped
- 1/2 cup cherry tomates halved
- 1 15 oz. can chickpeas drained

Instructions
- Combine the tahini, water and lemon juice in a bowl and whisk until well combined. Grate in the garlic and then add the herbs and spices. Mix well and taste for any seasoning adjustments.
- Combine all the salad ingredients in a large bowl. Add the salad dressing and toss.
