Happy Flag Day Oahu Fresh members! Did you know that June 14th is Flag Day? It’s the day the American flag was adopted by the United States, in 1777. Just a bit of trivia to start our post this week!
Your Flag Day bag is a celebration of Hawaii’s local summer produce: we’ll be bringing you Nalo greens, mango, zucchini, lychee, slicing tomatoes, green onions, and hydroponic lettuce. What to do with it all? There are plenty of options.
Roasted Zucchini with Green Onions, Feta, and Basil oh wow…that looks really good!
If it’s too hot to crank up the oven, try your zucchini on the grill: Grilled Zucchini Salad with Purslane and Tomato Purslane is a common green found in the fields here on Oahu, although it’s also commonly considered a weed! It’s also known as pigsweed. If you can’t find it, try any other green you like, or use your Nalo greens.
Blackened Shrimp Lettuce Wraps with Mango Salsa This might sound daunting, but it’s not! Really all you’re doing is searing the shrimp, making salsa, and wrapping it all up in lettuce leaves! So head out to your market’s fish department (or the North Shore if you have time, the shrimp trucks will sometimes sell you a bag of raw shrimp!) for shrimp, pick up cilantro, limes, and a serrano pepper. The rest of the ingredients are in your bag this week!! Oh, and maybe a few Coronas too…or Maui Brew Co beers to keep it local. Invite someone special over and get to work. In no time you’ve got a great summer dinner that’s local and healthy!
