Aloha Oahu Fresh folks! This week don’t forget to do something for Mom on Sunday…maybe make her a great brunch? I’m thinking we can help you out with that…because in this week’s bag we’ve got wonderful Ho Farms tomatoes and long squash, zucchini from Pit Farms, mixed organic baby greens from Kahumana Farm, mango from Frankie’s Nursery, and Shanghai bok choy from Green Growers. So here’s a plan for you:
Zucchini Egg Bake Once you cut up all your veggies for this it’ll only take a half hour or less until it’s ready to serve. Place a spoonful of it over top of those wonderful greens, add some tomatoes, and pour mom some tasty Hawaiian coffee or a mimosa! Add a slice or two of mango to the plate and the mimosa…mom will love you!
Stir Fried Shanghai Bok Choy with Ginger If making mom dinner is more your style, try this as a side dish to grilled fish, tofu, or chicken. A cold dry white wine will be good with it!
Impress mom and her friends with this appetizer if you’re having a potluck: Tomato and Mozzarella Skewers with Basil Oil And remember, you can simply add basil leaves to the skewers and drizzle with olive oil as an alternative to making the basil oil itself.
How to Cut a Mango Because let’s face it, it’s not the easiest fruit to deal with!
