Memorial Day Potluck Bag! May 22 & 23

Aloha members!  We are excited to bring you a bag this week that will help you have a great Memorial Day celebration, hopefully complete with some time off for you and a fun potluck to go to!  If that’s what’s in store, or if you have yet to make plans but are thinking about some down time with great food, try these recipes out on your family and guests and let us know how it went!  And please take the time to thank and remember those who have given their time, and lives, in service to our country.

This week’s bag will have sweet potatoes, snow peas, & tomatoes from Pit Farm, portabello mushroom from Local Kine Mushrooms, green eggplant from Ho Farms, and mango from Frankie’s Nursery.  These veggies are just set up for grilling and the mango can be used as a naturally sweet dessert or added to your beverage for a tropical twist!

Grilled Sweet Potatoes with Cilantro Lime Dressing   Prep this ahead of time by peeling and slicing your potatoes and making your dressing.  Then carry to your potluck in separate containers or ziploc bags, put potatoes on the grill  and you’re a star!

Tender Grilled Snow Pea with Cilantro   How to steam your snow peas on the grill…cilantro is a great addition here but if it’s not to your taste try squeezing a lemon over instead.

Grilled Portobello Mushrooms  My.Mouth.Is.Watering.

You can also use portobellos as the “bun” for your burger if you are choosing to avoid bread…Mushrooms as Hamburger Buns

Celery and Portobello Salad   A great way to use any celery left from last week’s bag!

Sweet Potato Salad   If you don’t want to grill your sweet potatoes but have a potluck to go to or are hosting, make a sweet potato salad.  It’s a healthier version of the standby potato salad…this one will take you a total of an hour and a half but the hour is just waiting for the flavors to meld.

Nothing says summer is here like coconut and mango…so drink it up with a Coconut Mango Mojito!!

Happy Memorial Day everyone- please take a few moments to remember the reason for this holiday.
