Ahoy Oahu Fresh members! This week’s bag is full of veggie booty…and tomorrow is International Talk Like a Pirate Day-so we’re going to find some great recipes that will have you feeling like you’ve found a treasure chest of gold–when really the booty is fresh local produce!
First, the booty: this week’s bag has avocados from Uluwehi Farms /Kama`aina Land and Plant Rentals, local bananas from Ho Farms, tomatoes from Green Growers, organic mixed greens and baby bok choy from Kahumana Farm, and daikon greens (tops) and eggplant from Pacific Gateway Farmers. So much to choose from!
Here’s our suggestions for using up your local bounty-
Grilled Eggplant & Bok Choy with Korean BBQ Sauce The picture of the bowl filled with rice, eggplant, bok chou, and topped with chicken looks great! I would also consider using tofu, fish, beef, or more veggies on top.
Creamy Chocolate Paleo Avocado Pudding I know, you are probably thinking eeewwww! but trust me, I tried this and it’s GREAT!
White Bean and Eggplant Hummus Make this and pack it to take to the beach, work, or a potluck with your friends. And btw white beans on sale at Safeway…
Mixed Green Salad with Avocado, Peaches, Bacon, Feta, and Champagne Vinaigrette I love everything about this recipe…and I know peaches are not locally grown on a large scale, but you could certainly sub in mango.
Also you can use your daikon greens in this mouth watering recipe: Sauteed Daikon Greens with Onion, Garlic, & Lemon.
