I had a lot of fun hanging out with friends, eating good food, and watching the Eagles beat up on the Cowboys! Sorry to all you Dallas fans (not really)! This week we’re trying out a new product from Ho Farms, watermelon radishes! Why is it called watermelon radish, you ask? Just cut it open and you’ll see why! Yep, it looks a lot like a watermelon! These beauties can be applied just like any other radish served cold or roasted. Check out some recipe ideas below!
Choy Sum – Leileihua High School
Mixed Greens – Mari’s Garden
Taro – Kakoo Oiwi
Watermelon Radishes – Ho Farms
Grape Tomatoes – Pacific Gateway Center
Avocados – Kamaaina Land
Roasted Watermelon Radishes – doesn’t get easier than that! Slice ’em and roast ’em! Add a little olive and salt and throw the radishes in the oven! Boom, done!
Watermelon Radish with Avocado Vinaigrette – use your lettuce, avocado, watermelon radish and maybe even go crazy and throw in a few grape tomatoes, throw in some oil, vinegar and few other things and you’re good to go!
Baked Taro Chips – in honor of keeping it simple, here’s an easy way to handle that bag of taro! Everyone loves chips!
