Memorial Day Potluck Bag! May 22 & 23

May 21, 2013 by Oahu Fresh Leave a Comment

Aloha members!  We are excited to bring you a bag this week that will help you have a great Memorial Day celebration, hopefully complete with some time off for you and a fun potluck to go to!  If that’s what’s in store, or if you have yet to make plans but are thinking about some down time with great food, try these recipes out on your family and guests and let us know how it went!  And please take the time to thank and remember those who have given their time, and lives, in service to our country.

This week’s bag will have sweet potatoes, snow peas, & tomatoes from Pit Farm, portabello mushroom from Local Kine Mushrooms, green eggplant from Ho Farms, and mango from Frankie’s Nursery.  These veggies are just set up for grilling and the mango can be used as a naturally sweet dessert or added to your beverage for a tropical twist!

Grilled Sweet Potatoes with Cilantro Lime Dressing   Prep this ahead of time by peeling and slicing your potatoes and making your dressing.  Then carry to your potluck in separate containers or ziploc bags, put potatoes on the grill  and you’re a star!

Tender Grilled Snow Pea with Cilantro   How to steam your snow peas on the grill…cilantro is a great addition here but if it’s not to your taste try squeezing a lemon over instead.

Grilled Portobello Mushrooms  My.Mouth.Is.Watering.

You can also use portobellos as the “bun” for your burger if you are choosing to avoid bread…Mushrooms as Hamburger Buns

Celery and Portobello Salad   A great way to use any celery left from last week’s bag!

Sweet Potato Salad   If you don’t want to grill your sweet potatoes but have a potluck to go to or are hosting, make a sweet potato salad.  It’s a healthier version of the standby potato salad…this one will take you a total of an hour and a half but the hour is just waiting for the flavors to meld.

Nothing says summer is here like coconut and mango…so drink it up with a Coconut Mango Mojito!!

Happy Memorial Day everyone- please take a few moments to remember the reason for this holiday.

May 15th and 16th bag items…

Wow, a fantastic bag is coming your way this week!  We’ve got celery and long beans from Ho Farms, corn from Waimanalo Country Farm, slicing tomatoes from Green Growers, papaya from Frankie’s Nursery, and crispy hydroponic lettuce from 808 Fresh!  I’m excited…can’t wait to make a stir fry with the long beans and some salads with celery, lettuce, tomatoes…or try out these recipes and let us know what you think.

Braised Celery    would be great alongside some steak or with pulled pork sandwiches!

Celery Stir Fry   from a Japanese Farm Cookbook…steam fish or tofu to go with this!

Celery Salad with Walnuts and Parmesan

Long Bean and Tofu Stir Fry

Corn, roasted in oven   I actually just started doing this but slightly different, based on advice from Nan Geller (Free Range Gourmet), you can actually roast the corn at a higher temp (425) and only for about 10 minutes or so.  You will smell it when it’s done!  You don’t need to remove the leaves or silk either, both will come off easily after roasting.

Bon apetit local food patrons–please enjoy this week’s produce–tomatoes from Punalu’u, long beans and celery from Kahuku, papaya, corn, and lettuce, all locally grown in Waimanalo!

May 8th & 9th…

May 7, 2013 by Oahu Fresh Leave a Comment

Aloha Oahu Fresh folks!  This week don’t forget to do something for Mom on Sunday…maybe make her a great brunch?  I’m thinking we can help you out with that…because in this week’s bag we’ve got wonderful Ho Farms tomatoes and long squash, zucchini from Pit Farms, mixed organic baby greens from Kahumana Farm, mango from Frankie’s Nursery, and Shanghai bok choy from Green Growers.  So here’s a plan for you:

Zucchini Egg Bake   Once you cut up all your veggies for this it’ll only take a half hour or less until it’s ready to serve.  Place a spoonful of it over top of those wonderful greens, add some tomatoes, and pour mom some tasty Hawaiian coffee or a mimosa!  Add a slice or two of mango to the plate and the mimosa…mom will love you!

Stir Fried Shanghai Bok Choy with Ginger   If making mom dinner is more your style, try this as a side dish to grilled fish, tofu, or chicken.  A cold dry white wine will be good with it!

Impress mom and her friends with this appetizer if you’re having a potluck:  Tomato and Mozzarella Skewers with Basil Oil   And remember, you can simply add basil leaves to the skewers and drizzle with olive oil as an alternative to making the basil oil itself.

How to Cut a Mango  Because let’s face it, it’s not the easiest fruit to deal with!

To all the moms out there in Oahu Fresh territory, Matt and I wish you a very Happy Mother’s Day this Sunday!!

and especially to our moms, Carol and Margo…xoxoxo

May Day bag!! May 1st and 2nd…what’s in store?

May 1, 2013 by Oahu Fresh Leave a Comment

Aloha Everyone! Happy May Day!  We have a wonderful bag this week just waiting to be delivered to you.  This week you’ll be receiving kale, green beans, tomatoes, green onions, lettuce, and either star apple or chico fruit!  Thanks to Ho Farms, Green Growers, 808Fresh, and Frankie’s nursery for providing us with excellent locally grown produce this week.

Star apple (seen at left) is easy to eat but you should avoid the skin.  Cut the fruit in half and spoon out the flesh.  You can also cut through the middle like a lemon and twist it apart.  Your star apple may be purple or green; both are already ripe!  Keep in fridge until you are ready to eat.  Some people say the texture is like grapes.  If you receive chico this week instead of star apple please see last week’s posting about how to eat it!

Kale Mushroom and Cheddar Bake   It’s been so hot that I would make this in the morning so that the kitchen has time to cool down then heat it up later.  It would be worth the work though and a great breakfast alternative.

Grilled Green Onions

Lemon Green Beans   so easy!

Simple Romaine Lettuce and Tomato Salad with Lemon Garlic Dressing   simplicity…have some grilled fish or other veggies on the side

Bag Items for April 24 & 25…

April 23, 2013 by Oahu Fresh Leave a Comment

Hello everyone!   What’s happening in this week’s bag!?  We’ve got slicing tomatoes and baby bok choy from Green Growers, Ho Farms cucumbers (either kirbys or mini japanese), green peppers from Pit Farms, organic mixed baby greens from Kahumana Farm, and a new fruit for us, chico (aka sapodilla) from Frankie’s Nursery in Waimanalo.  We’ll be providing a brief write up for every bag that will include information on the chico, but we’ll give you a little introduction right now as well.

From the Purdue website

Chico Smoothie

Chico Banana Butter

Green Pepper Steak

Grilled Bok Choy Salad   If you can get out to the grill between the rain showers, this will be one amazing salad!  Throw some fish or chicken on the grill a bit before and you’ll have everything ready to go at the right time.

BLT Wrap   You can make this wrap vegetarian by omitting the bacon.
