October 17th & 18th–Produce and Recipes!

October 16, 2012 by Oahu Fresh Leave a Comment

Hi Oahu Fresh members-here’s the list for this week’s bag.  We’ve got a treat for you this week–rambutan from the Big Island!  In addition we’ll have local organically grown oranges from Kama`aina Land Plant Rentals and Nursery, Nalo Greens from Nalo Farm in Waimanalo, long beans and green eggplant from Ho Farms, hydroponic lettuce from 808 Farm Fresh also in Waimanalo, and cilantro (chinese parsely) from Green Growers.

What to make with your produce?  A nice big salad comes to mind first, with some Nalo greens, lettuce, steamed long beans, and cilantro.  Use a little fresh squeezed orange juice in your dressing for a nice bright citrus taste.  Or you can make any of the following:

Asian Noodle Salad with Eggplant, Sugar Snap Peas, and Lime

Spicy Stir Fried Chinese Long Beans with Peanuts

Roasted Long Beans with Herb Butter

October 10th and 11th-bag items and recipe ideas.

October 8, 2012 by Oahu Fresh Leave a Comment

Greetings Oahu Fresh ohana!   This week we have a great bag of veggies and fruit-roma tomatoes and swiss chard from Ho Farms, fresh hydroponic lettuce from 808 Farm Fresh, corn and zucchini from Pit Farm, and mixed citrus and avocados from Kama`aina Land Plant Rentals and Nursery.

How to use this fresh wonderful produce to your advantage?  Well here are a few ideas…

Kahuku Corn Chowder with Cannellini beans and kale–you can use your swiss chard instead of kale.  If you don’t have or want to use nutritional yeast (which is often used in vegan/vegetarian recipes as an alternative for cheesy flavor and creaminess), you can just add cornstarch or arrowroot to thicken and some grated cheese.

Grilled tomato, mozzarella, swiss chard wraps   These look like pillows of goodness…I never thought to do this but it’s brilliant!

Avocado Melt

Tomato, Corn, and Avocado Salad

Avocado Citrus Smoothie   Use any combo of citrus that comes in the bag and your avocado for a vitamin packed smoothie you can sip on your way to work or at your desk.

October is Here! and this week a bag full of citrus! Oct. 3rd & 4th

October 2, 2012 by Oahu Fresh Leave a Comment

Aloha Members!  It’s only the beginning of  the month but we are super excited-wonderful things are happening with Oahu Fresh and we are thankful you’re part of it.  This week we have a great bag with wonderful citrus from 3 different farms, we are starting our pork shares delivery, and we have partnered with Design My Meals to make it even easier for you to create locally grown meals at home.

The bag this week is fantastic–you’ll be receiving jabong (pomelo) from Nalo Farms, oranges from Kama`aina Land Plant Rentals and Nursery, a tangerine and either a tahitian lime or Meyer lemon from Hoalike Farm, round eggplant from Ho Farms, hydroponic lettuce from 808 Farm Fresh, either arugula or pak choy and tomatoes from Pit Farms, and sweet potatoes from Mililani Ag Park.  WOW!  What to do with it all?  Well, Tina from Kama`aina Land says the oranges are fabulous, especially for juicing.  You can also make a citrus inspired lunch or dinner salad by adding slices of your jabong and tangerine to arugula, tomatoes, lettuce, and maybe some chicken.  It will be packed with vitamins, protein, and local flavor!!

If you haven’t had jabong (also called pomelo) before, it is similar to grapefruit but sweeter and not as tart.  Here’s a little local information on jabong, and another recipe, this one for Thai Pomelo Salad.

Sweet Potato Hash with Fried Eggs

September 26th & 27th Bag and Recipes

September 25, 2012 by Oahu Fresh Leave a Comment

Aloha members!  This week we’ll be bringing you a selection of wonderful local fruit from Tina and Bernie at Kama`aina Plant Rentals and Nursery in Poamoho.  They’ve been growing there for several years and have been providing us with fruit for over 2 years now.  This week they’ll have an orange, avocado, and 2 lilikoi for you, and you’ll also be getting swiss chard and japanese cucumbers from Ho Farms, asparagus and Ewa onions from Twin Bridge Farms, and Anaheim peppers from Nalo Farms.  It’s a diverse bag this week, but great for a variety of recipes!

Here’s the September 19th & 20th Bag!

September 17, 2012 by Oahu Fresh Leave a Comment

Aloha Oahu Fresh members!  September…the weather is just a little cooler overnight now, at least in some areas of Oahu.  We are happy to report that our farmers are still able to to provide quite a bit of produce, although it’s been tough to find lettuce!  However we persevered and we’ve got romaine  lettuce for you this week, along with butternut squash, collard greens, okra, bananas, green peppers, and a beautiful mix of herbs that will complement your roast chicken or vegetables or fresh pasta sauce!

If you’re feeling indecisive about what to cook this week, let us help you out!

Quinoa, Kale, and Butternut Squash Salad   This looks fantastic and very filling despite being called a salad.   Quinoa is a wonderful source of essential amino acids.  It’s actually not a member of the grass family so it is not a true grain, but is more closely related to beets and spinach!

Green Pepper and Tomato Salad   We don’t have tomatoes in this week’s bag, but this salad would go so well with grilled chicken –use your poultry mix herbs on it!-or baked fish.

Braised Chicken with Green Peppers and Tomatoes   a great weeknight meal…takes just a little over an hour, and much of that time is braising!

Roasted Okra  – doesn’t get much easier than this!

Sauteed Chiptole & Cumin Okra over Butternut Squash  whoever makes this and post a picture on the Oahu Fresh facebook page gets a free specialty item!

Raw Banana Curry  wow!  I never thought to do this, but it looks good.

Basic Greens with garlic, oil, and hot pepper

Pasta with Greens and Tomato Sauce

Bon apetit and enjoy your local produce this week!
