Aloha everyone!  Oahu Fresh hopes that the New Year is treating you well.  We are sending out a great bag this week, full of wonderful local fruit and produce.  You’ll be able to make a great salad with Maunawili Greens lettuce, Green Growers tomatoes, Ho Farms japanese cucumber, and Pit Farms broccoli!  You’ll also be able to add some papaya and rambutan to your breakfast or dessert.  Below area few other ideas for using your produce, enjoy!

Broccoli Stir Fry with Ginger and Sesame

Stir Fry Technique Here is a website that provides step by step directions on basic cooking techniques.  Stir frying sounds easy, but there are some secrets to it …for example prepping everything before you start to heat the wok or pan, and also to cut your ingredients into consistent sizes!

This week’s bag will help you get started off right; your bag will contain tangelos from High Mountain Farm, lettuce from Maunawili Greens, tomatoes & cilantro from Green Growers, sweet potatoes from Pit Farms, and eggplant from Ho Farms.

Garlic Fries with Cilantro There’s a great coffee shop/cafe on Kauai called Kalaheo Coffee and Cafe, and they serve  amazing french fries seasoned with garlic and cilantro.  This recipe is not theirs, but try it out and substitute cilantro for the chives, or add them both!

Creole Eggplant

Easy Moussaka Moussaka is a Greek dish using eggplant and spiced ground beef or lamb, topped with a creamy white sauce (bechamel).

Hi Everyone!  Happy holidays, we hope you will be enjoying the company of friends and family this season.

For this week’s bag, we have some wonderful avocados and tahitian limes from Hoalike Farm on the North Shore, eggplant from  Ho Farms, tomatoes from Green Growers, lettuce from Maunawili Greens, tatsoi from Nalo Farms, and thai basil from Pit Farms.

Easy Eggplant Recipes Some of these are more suited to Italian eggplant, however many will work with Japanese eggplant as well.

Easy Sauteed Tatsoi 5 ingredients:  olive oil, salt, pepper, garlic, tatsoi, pine nuts

For a more difficult recipe using your tatsoi and an avocado, try Tatsoi and Warm Scallop Salad with Spicy Pecan Praline.  This recipe takes a little longer and has a number of ingredients, but looks like a great dinner for guests or date night…;)  It serves 6, so you may need to buy more tatsoi or spinach to make enough for six, but you can also cut in half for just two.

Napa Cabbage, Tomato, and Avocado Salad This recipe calls for cherry or grape tomatoes but you can cut your slicing tomato into cubes or thin slices instead.
