It’s the end of June bag!! June 26 & 27-here’s what’s coming!

Aloha everyone-how is your summer coming along?  Did you enjoy the super moon on Sunday?  Well, we’ve got a super bag this week, and hope you will enjoy it too.  Here’s what we’ve got:  from Pacific Gateway Farmers in Kunia we will have spicy peppers, bush beans, and radishes, from Ho Farms we’ll have butternut squash, from Frankie’s Nursery we will have bananas, tasty great tomatoes from Green Growers, and we’ll have wonderful lettuce from 808 Farm Fresh!

Warm Butternut and Chickpea Salad with Tahini Dressing

Grilled Butternut Squash   easy!!  Just put the squash (halved) on the grill…

Pioneer Woman Green Beans Recipe   I would probably cook these a little less, and use less broth.

Radish Sandwiches on Zucchini Muffins   Radishes would be great on croissants, whole grain english muffins, or these muffins if you are feeling so inspired!

June 19th & 20th bag!

Hello everyone!  We hope your summer is off to a great start…ours has been good so far!  This week we have a really good bag.  I can’t wait to make some meals with the produce in this one, I think it’s all my favorites!  Ho Farms provided us with round eggplant and swiss chard, Green Growers green onions, mango from Frankie’s nursery, lettuce from 808 Farm Fresh, and we have tomatoes and string beans from Pacific Gateway farmers in Kunia.  Mmmmmmm!

Suggestions on what to do with it all?

Marinated Green Bean Salad   This is an easy recipe!

Eggplant Pizza Rounds

Eggplant Dip/Baba Ganouj

Grilled Eggplant, Tomato, & Goat Cheese   These look amazing…hoping to make them this weekend.

Spaghetti with Swiss Chard and Garlic Chips

Swiss Chard, Onion, & Cheese Frittata   What’s not to love about frittatas?  They are great anytime.

June 12th & 13th bag!

Aloha Oahu Fresh members!  Can you believe its mid June already!?  Well, one nice thing about the early part of summer is that produce begins to be abundant–this week we’re taking advantage of that by bringing you some summer fruit.  This week’s bag will feature a new fruit variety for us, local sugar bananas from Ho Farms.  We’ll also include a mango from Frankie’s nursery (can’t get enough of those mangos!), green eggplant from Ho Farms, radishes and string beans from Pacific Gateway Center farmers, and fresh lettuce from 808 Farm Fresh in Waimanalo.
What’s a sugar banana?  It is a variety known as Lady Finger, and is smaller and sweeter than the common Cavendish banana.  It is often eaten as a dessert.  We’ll include a few recipes so you can try them out and let us know what you think.

Grilled Brown Sugar Bananas   You may want to grill these without the brown sugar, or try one with and one without, so you can get a sense of what the banana tastes like on its own.  These would make a great dessert when camping.

Green Eggplants Cooked in Milk   This recipe has additional tips on cooking eggplants at the end!

String Beans Lyonnaise   simple yet not basic!

Chicken Mango Lettuce Wraps   I have been eating all kinds of stuff on lettuce leaves and in wraps lately…lettuce is the perfect wrap or cup for all sorts of fillings, from smoked marlin spread (my latest fave!) to a mushroom/chicken/mango mix like this one!

It’s June! The “school is out” bag…what’s coming for June 5th & 6th?

Aloha summer!  School is out, the parents out there are probably a little less stressed…well, maybe!  But this week we’re bringing you a fabulous bag with produce from some new farmers and we hope you enjoy it.  We’re now working with the Pacific Gateway farmers in Kunia, and they bring a variety of produce options to our service.  This week we’re bringing you their red radishes and long squash, along with long beans and collard greens from Ho Farms, papaya from Frankie’s nursery, tomatoes from Green Growers, and organic mixed greens from Kahumana Farm.  What to do with it all?

Of course a simple salad is sometimes overlooked in favor of making something more complicated, but sometimes simpler is better!  Here are a few recipes to inspire you, simply:  Perfect Lettuce Salad, Chopped Salad with Avocado and Radish

And if all you need is a dressing, try this one from Ina Garten:  Vinaigrette for  Green Salad

Awesome Collard Greens  a vegetarian version!

Collards, Carrots, & French Green Lentils   also vegetarian, and would be tasty with fish as well.

Grilled Summer Squash   Disclaimer:  this one doesn’t specifically say long squash but I think it would work well and the recipe calls for feta too, so…bonus!!

Last of May bag…5.29 & 5.30

Aloha everyone and welcome to summer!  It’s unofficially here, although you wouldn’t know it by the rains we’ve been having.  This week we’re so pleased to bring you some wonderfully summer-y produce despite the rains…we have tomatoes vine ripened from Green Growers, butternut squash and string beans from Ho Farms, fresh crispy lettuce from 808 Farm Fresh, mango from Frankie’s Nursery, and green peppers from Pit Farms.

Many times I think of butternut squash as a fall veggie and so recipes with it tend to be heavier than you may want for hot weather.   This time I endeavored to find a summer recipe for it…and succeeded!  Summer Butternut Squash Soup, with crabmeat, would be a great start to a light meal.

If you are looking for something new to do with your tomatoes try slow roasting them.  It brings out the flavor so intensely!  Slow Roasted Tomatoes.  This would be a great addition to pastas, wraps, and sandwiches.

Green Pepper and Onion Pizza   An easier way to get the kids to eat their veggies.

Use your amazing lettuce and tomatoes here on this BLT with a Fried Egg and Cheese and have a wonderful morning!
