It’s rainy mid-January, what do we have for you this week?

It’s winter now here in the islands so please remember the farmers are working hard in some really wet conditions to bring this locally grown produce to you.  Please be patient if there are items that are not available during this time!

This week we’ve got hydroponic lettuce from Mari’s Garden, slicing tomatoes from GreenGrowers, mixed tangerine and tangelos, and fresh rosemary from Kama`aina Land Plant Rentals and Nursery, and kale and long beans from Pacific Gateway Farmers.

With intermittent wet weather abounding you may be thinking about warm comforting meals that you can use your produce in.  Here are some recipes for you to try!

Slow Cooker Sweet Potato, Kale, and Chicken Stew   This is perfect for when you know you’ll getting home late -set it up in the morning and when you get home do the last step.  Relax for an hour, then dinner is ready without much work on your part!

Green Bean Salad with Basil, Balsamic, and Parmesan

Baked Tomato and Egg Cups   This recipe shows roma tomatoes, so you can use any romas left from last week’s bag, or do this with this week’s slicing tomatoes.  This would be a great Sunday brunch, or a wonderful light dinner with a salad and some bacon if you like it on the side!

Easy Artisan Roasted Garlic Rosemary Bread   Use your fresh rosemary to make this yummy looking bread and your house will smell amazing!

We’re back! January 8th and 9th bag!

Happy New Year Oahu Fresh family!  We’re excited to bring you a bag this week after two weeks off–and we hope you had a wonderful holiday.  We’re ready to bring fresh energy to our business this year and hope that you will benefit from it–and tell your friends about our service too!  This week’s bag is full of vibrantly colored produce that will taste great and have you feeling even better.  We’re getting organic carrots and organic mixed greens from Kahumana Farm, string beans and cucumbers from Pacific Gateway Farmers, tangelos from Kama`aina Land Plant Rentals and Nursery, and Ho Farms tomatoes!

Suggestions on how you can use this produce:

Carrot Ginger Soup   This soup is a winner for being easy, healthy, and tasty!  I made this just a few nights ago, and added 2 cloves of garlic and 1/3 cup of tofu.  I blended mine in the Vitamix.

Cherry Tomato Mozzarella Saute

No Rice No Seaweed Cucumber Sushi Roll   This is a youtube clip and looks really good & pretty healthy!

Tangelo Pork Stir Fry

Parmesan and Cranberry Salad with Pear Vinaigrette

Winter Salad with Apples and White Cheddar   Use your mixed greens in either of these salads.

December 18th and 19th-the Holidays Bag!

Happy Holidays Oahu Fresh family!  We’re looking forward to bringing you the last bag of 2013 this week and hope you will enjoy it over the holidays!  We will not be delivering during Christmas and New Year’s weeks, but we will be seeing you again on January 8th and 9th.  For this last bag of the year though here’s what you can expect:

Red and green mixed hydroponic lettuce and baby mizuna from Mari’s Garden, organic beets from Kahumana Farm, sea asparagus from Marine Agrifuture, green beans from Pacific Gateway Farmers, and plenty of mixed organic citrus from Kama`aina Land Plant Rentals and Nursery.  How can you make the most of the produce this week and next?  Your citrus will keep well for a week or two, and you can definitely put it in the fridge if you like or keep it on the counter.  Your hydroponic greens and everything else, should also keep well for at least the week, maybe longer for the beets!  To use them up sooner though here are a few suggestions:

Marinated Beet Salad

Lettuce Wraps–15 recipes!

Grilled Shrimp and Mizuna

Sauteed Sea Asparagus

and finally from Tina at Kama`aina Land: a tasty way to use some of your citrus–in a Butterscotch Bourbon Apple Cider!

Here’s what we’ve got for you, Dec 11 & 12!

Mele Kalikimaka Oahu Fresh ohana!  It’s just two weeks from the Christmas holiday, and we want to wish you a happy holiday season!  We also would like to let you know that we will not be delivering produce over Christmas and New Year’s weeks.  We’ll be back on schedule for January 8th.

For this week we’ve got a stellar bag worked out for you, including an item we haven’t had for a while, fresh island corn!!  This is coming to you from Leilehua High School’s ag students.  We’ll also have a lemon, kale mix, and organic mixed greens from Kahumana Farm, grape tomatoes and long beans from Pacific Gateway Farms, and japanese cucumbers from Ho Farms.  You have a lot of options for what you can do with this produce, but below we’re listing a few ideas in case you are looking for a quick easy meal!

25 Fresh Corn Recipes   A mix of easy grilled corn on the cob to soups and sides recipes.

Kale of all Kinds   Here are a few recipes for kale as well as an explanation of the various kinds out there.  This week you’ll be receiving a mix of curly and dino kale.

Long Bean, Cucumber, and Tomato Salad   This.Looks. GOOD!  Thai salad, with lots of ingredients you probably already have on hand.

Lemon Garlic Salad Dressing   Uses only one tablespoon of lemon juice and a little zest.

Lemon Mustard Vinaigrette   Similar to the above but requires two tablespoons of lemon juice.  Easy to make, and healthy!
