Your last week of May bag!!

Happy post Memorial Day everyone!  Oahu Fresh had a good Memorial Day weekend, with a morning ceremony at Punchbowl, beach time, Lantern lighting, and finally some grilled local eggplant, sauteed swiss chard, and an Oahu Fresh salad for dinner!

This week we are bringing you sweet potatoes, peppers, braising greens, kale, grape tomatoes, and we hope some mangoes!!  We’re still waiting on confirmation on the mangoes, but we’ll let you know as soon as we know for sure!

Sweet Potatoes, Braising Greens, and Mangoes   The original recipe here uses apples, but I think to make it totally local you could sub in mangoes.  I would not saute the mangoes for as long as the apples, so maybe do just a quick five minute saute before you add them to the greens.

Boiled Kale and Eggs   To make this quicker you can use prepared chicken stock and boil the kale ahead of time. This would be a great breakfast.

Quinoa with Caramelized Onions and Green Peppers

Grape Tomato Salsa   YUM!  also you can make the carrot fritters if you’r e feeling like spending a little more time in the kitchen!

Aloha Oahu Fresh members! This week’s bag will knock your socks off! We’re bringing you roma tomatoes, swiss chard, long eggplant, japanese cucumbers, “cool greens” mix, and hydroponic lettuce. Nalo Farms is introducing a new mix of greens with mint and basil (cool!) so we are happy to be trying that out this week, and we hope to hear from you on what you think about it.

Easy Indian Style Okra   Many excellent review of this recipe, even from people who never tried okra before!

Roasted Pineapple with Honey & Pistachios   an elegant dessert that takes less than an hour!!

Sauteed Scallops with Cherry Tomatoes and Green Onions

BLT Bites (Stuffed Cherry Tomatoes)   pretty and tasty!

Ginataang Sitaw Kalabasa   Shrimp, green beans and squash in coconut milk–calls for acorn or butternut but you can use long squash!!

Aloha Oahu Fresh Members!  This week’s bag is fun filled–we’ve got cherry tomatoes, round eggplant, braising greens, spaghetti herb mix, lychee, tangelos,  and gherkins!

What do we have for May?

This week’s bag has me thinking stuffed peppers and kale salad!  You’ll be receiving kale, cherry tomatoes, green peppers, daikon, Japanese cucumbers, and long beans and papaya.  For this week’s recipes, we’ll suggest how you can use these items solo or with minimal additions.
