June 27th & 28th Produce and what to do with it!

Aloha Oahu Fresh members!  This week’s bag is salad friendly…hydroponic lettuce, nalo greens, tomatoes, cucumbers, daikon, okra, and bananas!

Have you tried okra before?  Some say it’s an acquired taste, but like anything else, it depends on how you prepare it.  Okra can be pickled, smoked, fried, or used in stews and jambalaya.

Daikon, if you are not familiar with it, is a radish commonly used in Japanese and Vietnamese dishes.  It’s a bit more subtle than French radishes, and pickles easily for a great sandwich topping.

Cajun Jambalaya with Okra, Andouille, and Shrimp   Lots of ingredients for this one but you’ll have a few meals out of it!

Pickled Daikon and Carrots

Easy Daikon Salad Recipe

Crispy Fried Okra   You will be getting a half pound of okra in your bag, so halve this recipe.

Creamy Chilled Cucumber Dill Soup  This is a no cook meal that would be great to take to work for lunch, with some shrimp or avocado added on top….YUM!

Hello and welcome to another wonderful week of fresh local produce!  This week we’ve got pineapple, mint, braising greens, hydroponic lettuce, tomatoes, and butternut squash!  I’m excited about it and hope you are too!

Pukka Pineapple with Mint Sugar   from Jamie Oliver…easy and delicious!

Butternut Squash Saute   with bacon and spinach…yes please!

Greens braised with Anchovy and Tomato   sounds great, pair with some easy grilled chicken or salmon

Flag Day Bag!

Happy Flag Day Oahu Fresh members!  Did you know that June 14th is Flag Day?  It’s the day the American flag was adopted by the United States, in 1777.  Just a bit of trivia to start our post this week!    

Your Flag Day bag is a celebration of Hawaii’s local summer produce:  we’ll be bringing you Nalo greens, mango, zucchini, lychee, slicing tomatoes, green onions, and hydroponic lettuce.  What to do with it all?  There are plenty of options.

Roasted Zucchini with Green Onions, Feta, and Basil   oh wow…that looks really good!

If it’s too hot to crank up the oven, try your zucchini on the grill:  Grilled Zucchini Salad with Purslane and Tomato   Purslane is a common green found in the fields here on Oahu, although it’s also commonly considered a weed!  It’s also known as pigsweed.  If you can’t find it, try any other green you like, or use your Nalo greens.

Blackened Shrimp Lettuce Wraps with Mango Salsa   This might sound daunting, but it’s not!  Really all you’re doing is searing the shrimp, making salsa, and wrapping it all up in lettuce leaves!  So head out to your market’s fish department (or the North Shore if you have time, the shrimp trucks will sometimes sell you a bag of raw shrimp!)  for shrimp, pick up cilantro, limes, and a serrano pepper.  The rest of the ingredients are in your bag this week!!  Oh, and maybe a few Coronas too…or Maui Brew Co beers to keep it local.  Invite someone special over and get to work.  In no time you’ve got a great summer dinner that’s local and healthy!

Summer’s First Bag o’Goodness!

Aloha Oahu Fresh members!  Welcome to summer…and a fantastic full bag of locally grown greatness.  This week we’re so happy with our bag–it’s full of wonderful seasonal fruit (mangoes and lychee), greens (kale and manoa lettuce), tomatoes, cucumbers, and a fresh mix of herbs (rosemary, Italian sage, and thyme) from Nalo Farms.

What will you be doing with all this goodness?  Well, I bet it won’t take you long to try those juicy mangoes and if you can be patient and put the lychee in the fridge for a bit, you’ll be rewarded with chilled sweet “candy” with very little effort.

For the remainder, here are a few suggestions:

Chilled Kale and Potato Soup   A great make-ahead that you can take for lunch and not even have to use the microwave!  Just grab your water and a spot in the sun for a healthy noontime break.

Cucumber Hummus Bites with Sesame Seeds   These look elegant, but don’t wait for a party to make them.  Pamper yourself and your family with these delicious appetizers while the sun goes down…you’re worth it!

Lychee Martini   Because you need a drink to go with those appetizers…                      

Mango Salsa   This is great on fish or chicken, or in fish tacos.

Grilled Chicken with Herbs   Use the mixed herbs from Nalo (Poultry Mix) for a wonderful grilled chicken dinner.
