March Madness bag! 3.6 & 3.7

Aloha Oahu Fresh family!   I don’t know about you but I am thankful that the heavy wind has abated…last weekend I spent some time at Kaka`ako Park and thought that the dog might blow away…the chair did!  The weather has been wreaking havoc on our farmers’ greens, at least those farmers on Windward side and some in central Oahu.  Luckily we’ve got some wonderful organic keiki greens from Wai`anae again…thank you for the feedback on those, it helps us and the farmer!  Along with the baby greens this week we’ve also got zucchini, mushrooms, sweet potatoes, sugar snap peas, and round eggplant.

Here’s what you might try in the kitchen with this week’s produce:

Eggplant & Mushroom Pizza   Pizza and wine and Friday night movie!

Sugar Snap Peas and Mushrooms in Wine Sauce

Zucchini “Fettucine” with Tomato Sauce   This is a great way to use your zucchini especially if you are trying to eat less pasta or refined grains.  It’s fresh tasting and light, and would also be great topped with pesto or classic oil and garlic sauce.

Sesame Dressing   Try this dressing on those amazing organic greens, maybe with shredded chicken, tofu, or shrimp for a healthy and great tasting lunch.  Your officemates will be jealous!

Oh my goodness–what a great bag this week!  I’m so excited for it-so no delays, here’s what’s coming!

Poultry mix herbs from Nalo Farms, local bananas, papayas, tomatoes, and corn from Pit Farms, mushrooms for Small Kine Farm, and organic keiki greens from Kahumana Farm.  I’m thinking already about a mushroom stir fry with fresh herbs, corn, and tomatoes, served over the mixed greens, or even in a pita or wrap for a healthy quick lunch.  The banana and papaya will make a great smoothie.  Or try the following recipes out if you’re feeling more adventurous:

Farro with mushrooms and herbs

Eggs scrambled with wild mushrooms and fresh herbs   a great way to get out of your usual breakfast routine!

Fresh Green Beans with Bacon, Mushrooms, and Herbs   this side dish looks fantastic…serve with some garlic bread?! YUM

Since you’re receiving fresh organic baby greens in this week’s bag, I would suggest going a minimal route with them and only dressing them with a light vinaigrette.  The flavor of the greens will stand out, rather than the dressing.  Instructions on making a simple vinaigrette  .

Papaya  Banana Smoothie   What a great combination…papain in the papaya is great for digestion, and banana (& yogurt) has potassium, which is good for building muscles and breaking down carbohydrates!!

Aloha!  We’re happy to bring you this week’s bag items, courtesy of Ho Farms, Pit Farms, Green Growers, Kama`aina Land Plant Rentals and Nursery, & Nalo Farms.  What’s in store this week?  A mix of tangerine and tangelo, slicing tomatoes, sweet potatoes, sugar snap peas, zucchini, round eggplant, & poultry mix herbs.

Here are a few suggestions on what you might do with your produce this week:

Roast Chicken with Fresh Herbs   This recipe will use your poultry mix herbs and provide the base for a great meal.  You can then serve a few sides with your chicken using your zucchini, sweet potatoes, snap peas, and or eggplant!

Sauteed Sugar Snap Peas   easy!!

Quick Saute of Zucchini with Toasted Almonds   From Smitten Kitchen, minimal and fast!

Pureed Sweet Potatoes   From Real Simple, this recipe  uses maple syrup and 4 # sweet potatoes.  Since you will not have 4# in your bag, cut the other ingredients and use only a quarter.

Easy Fried Eggplant   This would work as a side dish or a main dish for lunch with sliced tomatoes and some baby greens.

Happy Valentine’s Day and Viva  la Mexico!  Lisa went to Mexico this week so let’s all pretend we are there with her by having a Mexican theme with our bag!  This week item’s include:

Broccoli from Pit Farms

Papayas from Pit Farms

Roma Tomatoes from Green Growers

Mexican-Style Stuffed Green Peppers! – Add in some Kuahiwi Ground Beef for a quick and easy snack or meal!

Mexican Squash – any recipe that calls for lots of butter and cheese, it must be good!

Mexican Roasted Garlic and Broccoli  – another quick and easy snack/side dish

Greetings Oahu Fresh Members!  Hope you are doing well this week.  We’ve got some wonderful items in this week’s bag…lemongrass, poultry herb mix, grape tomatoes, choy sum, nalo greens, zucchini, and bananas.  Lemongrass is a new one for us, and maybe you are not too familiar with it either, so we’ll give you some background and recipes that you can use it in this week.

Lemongrass is a grass type herb often found in Thai cooking; you may recognize it’s scent and particular flavor if you’ve had any Thai food here in Hawaii.  For more information on it and some recipes in which you can use it, try this link:  Lemongrass–How to Cook
