This week’s bag features Long Squash! Also called Upo, bottle gourd, calabash, opo squash, and long melon, long squash is similar to zucchini. It has a light green, thin skin, and the center flesh is white and spongy with seeds. The flavor has been described as a cross between cucumber and zucchini. Popular cooking methods include grilling, baking, stir-frying, stuffing and stewing. The skin and the seeds of the long squash are edible though many peel the squash and cut out the seeds and the center which can be pithy. Long squash should be stored in the refrigerator to keep it fresh. What else is in the bag?
