It’s already November! What are we bringing you this week?

November 4, 2014 by Oahu Fresh Leave a Comment

Happy Fall Oahu Fresh members!  Hope you had a fun filled Halloween, taking advantage of the opportunity to be an alternate version of your daily self!  Trick or treating is a great way to relive the fun of that holiday too, if you didn’t try it this year, find some friends with keiki and go out next year, it’s really fun!

This week we have a great bag for you:

  • Ho Farms butternut squash
  • Ho Farms long beans
  • Pacific Gateway Farmers kale
  • Avocado from Kama`aina Land Plant Rentals and sharwil avocado  from Serikaku Farms
  • Daikon grown by Leilehua HS Ag Students
  • Mari’s Garden hydroponic and organic lettuce

If you’re stumped on what to do with these items, here are some tips and recipes to help you get started.

Quick Pickled Carrots and Daikon (and an easy recipe for Bahn Mi, yum!!)  If you haven’t had a Bahn Mi sandwich yet, get yourself to the Pig and the Lady quick and try one!  TPATL has pop ups that can be found at several of the local farmers’ markets, or you can visit their brick and mortar restaurant in Chinatown for lunch.  In any case, try the bahn mi, then if you’re in love, you can recreate it at home!

Garlicky Daikon Mashed Potatoes

Portuguese Chourico and Kale Soup

Lemony Kale Salad with Pine Nuts, Raisins, and Parmesan   One of my favorite ways to eat kale, and I love the sweet and salty combination of raisins and cheese.  Plus fatty nuts!  What’s not great about this salad!?

Not sure what to do with long beans?  My last bunch I cooked by cutting them up into pieces about 2-3 inches long, then sautéeing them in coconut oil and walnut oil.  I added some pecans, and a little salt.  After the beans cooked to bright green, I took them off the heat, and added a few more splashed of walnut oil.  Done!

Quinoa, Kale, and Bacon Stuffed Butternut Squash

Halloween Week Bag! What are we treating you to?

October 28, 2014 by Oahu Fresh Leave a Comment

Spooky Greetings Oahu Fresh members!  We are happy to bring you the items in this week’s bag for your Halloween week meals!  What’s coming?

  • Ho Farms collard greens
  • Pacific Gateway Farmers lemongrass
  • Pacific Gateway Farmers bitter melon
  • Small Kine Farm mushrooms
  • Kakoo Oiwi bananas
  • Mari’s Garden lettuce

I’m sure there are plenty of ways you can use your bananas but here’s one that I just tried out and really liked-

Banana Rice   I had this with chicken satay and it was fantastic, we made the satay sauce with almond butter instead of peanut butter–a great substitution.  And we didn’t use the coconut extract called for, instead we cooked the rice in coconut milk and added some chopped unsweetened coconut shavings.

Lemongrass Ginger Tea

Grilled Lemongrass Beef and Noodle Salad   Can’t wait to make this one!

Bitter Melon Salad   I’ve never seen bitter melon used this way, so let us know what you think!

Sauteed Mushrooms with Red Wine   This would go great with steak…

Not sure what else to do with your lettuce?  Try this if you’re tired of salads:  Pea and Lettuce Soup

Have a great week Oahu Fresh members and let us know what you cooked with this week’s produce!

October 21, 2014 by Oahu Fresh Leave a Comment

Oahu Fresh members, are you drying out after all this rain?!  We’re glad we missed the hurricane winds, but the rain, while steady, was a lot and our farmers are feeling the effects.  This week’s bag has fun items nonetheless:

  • Ho Farms papaya
  • Ho Farms lemongrass
  • Ho Farms butternut squash
  • Kama`aina Land Plant Rentals and Nursery avocados
  • Kahumana Farm mixed organic keiki greens
  • Mari’s Garden hydroponic lettuce

Now what to do with all this produce?

Lemongrass Beef and Onions over Vermicelli

Butternut Squash and Apple Soup

Fall Greens Salad with Pumpkin Seeds and Asiago

Enjoy!

There’s taro this week! October 15th & 16th

October 13, 2014 by Oahu Fresh Leave a Comment

Oahu Fresh members, we have taro this week!  What else are you going to have in your bag?

  • Ho Farms Okra
  • Leilehua HS Ag Students Daikon
  • Mari’s Garden hydroponic Lettuce
  • Kakoo Oiwi Taro
  • Kama`aina Land Plant Rentals and Nursery Avocados
  • Pacific Gateway Farmers Eggplant and Chives

Have you tried making taro hash?  If you’re looking for a new way to eat it, try this:  boil your taro until it’s tender, then let it cool and peel it.  It can be stored in the fridge in a ziploc bag or tupperware container.  Then just rough chop/dice in the morning, season with salt, pepper, and any other spices you like, and sauté it in a skillet with some oil or butter.  It goes great with eggs!

Buttered Noodles with Chives   You can make this pasta, or you could make the sauce and put it over zucchini noodles, sweet potato spirals, etc.
