Aloha Oahu Fresh family!  We’re looking at a great bag this week–you will be receiving rambutan from Frankie’s Nursery in Waimanalo, swiss chard and tomatoes from Ho Farms, string beans from Pacific Gateway Farmers, organic keiki greens from Kahumana Farm, and green onions from Green Growers.  Below are some suggestions for you using all of this week’s amazing produce!

Valentine’s Week Bag!

Hi Oahu Fresh family!  We are so glad to see the sun again and I know that our farmers are even happier.  While it is still very wet around the island, we can expect farmers to be getting back out in their fields now that the rain has let up.  Of course all that rain also brings weeds, so they will be even busier than usual soon!

This week, despite the recent rains, we are bringing you plenty of healthy greens!  Kale and eggplant will be in your bag from Pacific Gateway Farmers, collard greens and long/string beans from Ho Farms, beautiful hydroponic lettuce from Mari’s Garden, and juicy clementines from Kama`aina Land Plant Rentals and Nursery.  There’s a nice variety of greens here that you can use to make someone special a delicious and healthy meal for that special day at the end of this week…or treat yourself, you’re worth it!!

Chopped Collard and Kale Salad with Lemon Garlic Dressing   Easy to prep, this salad can be a meal in itself!

Baba Ganoush   A vegetarian eggplant dish, this one is even better if it has a day or two to sit.

Here’s an unusual use for your green beans–Green Bean Slaw (on an Egg Sandwich)

Cornbread and Collards   This recipe is a little longer on the ingredients than many that we post here, but I think it’s worth a try!

If you happen to have any clementines already and want to do something different with them, try this Clementine Cake recipe.  It calls for 4-5 clementines so you may need a few extra.

Rainy day bag items! February 5th and 6th

Rain, rain go away….welcome to a more normal winter here in the islands.  We have been spoiled with not very rainy winters for a few years, which is great except it leaves us with drought conditions.  But this needed rain is also making it difficult for farmers to plant, harvest, and everything in between!  Luckily we were still able to come up with a really diverse bag this week.  You’ll be receiving organic keiki greens from Kahumana Farm, string beans, grape tomatoes, and Japanese cucumbers from Pacific Gateway Farms, apple bananas from Frankie’s Nursery, and bok choy and green onions from Green Growers.  We’re sure you will find some time inside in your kitchen a pleasure when you’re cooking up all this delicious food.

Not sure what to do with your Japanese cucumbers?  Try Tsukemono, a Japanese style of pickling.

Slow Roasted Tomatoes   I may have posted this or something similar before, but slow roasted tomatoes are just.too.good!

Hi everyone!  This week’s bag is perfect for making comforting meals for the cool weather we’ve been having.  We will be bringing you sweet potatoes from Mililani Ag Park, bananas from Kahuku farms, kale and long beans from Pacific Gateway Farmers, tangerines from Kama`aina Land Plant Rentals and Nursery, and lettuce from Mari’s Garden.  What to do with it all…

Brussel Sprout Hash with Sweet Potato and Bacon   Wow!  I want this for breakfast…although I would replace the brussel sprouts with kale, not because I don’t like them (I do!) but because the kale is already in the bag…no need to go out to get something different!

Marinated Green Bean Salad   A good way to use your long beans, and great to have with lunch or a side to fish, chicken, or tofu.

Tangerine Dream Cocktail   Kickstart your pau hana with a local tangerine twist!

Lettuce is easy to make the base of almost any salad, but have you tried using it to wrap veggies, cheese, or meats like a sandwich or tortilla?  If not, give it a try, and if you’re up for it, try one of the dipping sauces below to enhance it!

Stellar bag this week!! January 22 and 23 2014

Oh my-this week’s bag is GREAT!  I’m really stoked about it so I just have to tell you:  organic mixed greens from Kahamana Farm, radishes & green onions from Mari’s Gardens-organic and hydroponically grown, eggplant from Pacific Gateway Farmers, baby romas from Ho Farms, string beans from Ho Farms, and mixed citrus from Kama`aina Land Plant Rentals and Nursery!  So much yumminess!

OK-so now what to do with it all?  Well, a few hours in the kitchen with the help of the following recipes will set you up for the rest of the week until your next delivery.  Here you go:

Curries are a wonderful way to use a lot of veggies, use only one pot, and they often make enough to freeze some for lunches later.  This South Indian Style Vegetable curry calls for various veggies not in this week’s delivery–but you can sub in your string beans, eggplant, tomatoes, and green onions instead of what is called for.  Serve it with rice, cauliflower rice, and a salad!
