This Week’s Bag Featuring Sweet Potatoes – Week of March 20th

March 20, 2017 by Oahu Fresh Leave a Comment

The Sweet Potato is one of the oldest vegetables known to mankind. Sweet potatoes originated in Central and South America, but archaeologists have found proof through prehistoric remnants that the sweet potato was grown in Polynesia before western exploration, according to radiocarbon dating. Current thinking is that it was brought to central Polynesia around 700 AD, possibly by Polynesians who had traveled to South America and back, and spread across Polynesia to Hawaii and New Zealand from there.

The sweet potato is not a potato, and it is not a yam!

Preparation

The simplest way you can prepare a sweet potato is by first heating the oven to 400° F. Pierce each sweet potato several times with the tines of a fork. Place the sweet potatoes on a rimmed baking sheet lined with foil. Bake until tender, about 45 minutes. Make a slit in the top of each sweet potato.

Sweet Potato Collard Green Stir Fry

March 20, 2017 by Oahu Fresh

In this African side dish, collard greens take on a fruity zest when sautéed with orange juice, tamari and curry powder. The flavors may seem exotic, but even the most skeptical palates will take comfort in traditional sweet potatoes, raisins and peanut butter presented in an innovative style.

This Week’s Bag Featuring Butternut Squash – Week of March 13th

March 13, 2017 by Oahu Fresh Leave a Comment

This week’s bag features Butternut Squash! Butternut Squash is typically grown during the winter time on the mainland however grows well during spring time here in Hawaii.  It grows on a vine and tastes similar to pumpkin.  As it gets ripe it gets deeper orange in color and sweet and rich in flavor.  It’s a great source of fiber, vitamin C, A & E, magnesium, and potassium.

Butternut Squash may appear intimidating at first but it’s really not!  First thing is first, grab a vegetable peeler and take of the skin, just like you would with a carrot.  Then grab a large knife and slice the squash in half long ways, through the spine.  Next, clean out the seeds and stringy stuff, just like last Halloween’s pumpkin!  You can then slice across the squash into bit size pieces.  Boom, your squash is prepped and ready for action.  Throw in a skillet, throw in the oven, check out the recipes below for more info!
