This week’s bag features Waialua Red Potatoes! There are more than 600 varieties of potatoes that are sold throughout the U.S. Red Potatoes are small to medium in size, have smooth red skin, and white flesh.  Red potatoes stay firm throughout the cooking process due to their waxy texture. They are great for roasting, cooked in stews, in potato salad, baked or mashed.  The red skin is particularly healthy and has fiber, B vitamins, iron, and potassium. This week’s bag features Hakurei turnips! Hakurei turnips are a variety of salad turnips. They are small in size, white in color and have a sweet, light flavor. Their texture is crisp and tender and they are often eaten raw. The roots should stay fresh for a couple weeks stored loosely in a plastic bag in the crisper drawer. This week’s bag features Round Eggplant! Eggplants are actually a fruit but prepared and cooked like a vegetable. The texture of their flesh is meaty and absorbs sauces and cooking liquids easily. They can also be fried, stewed, stir-fried, stuffed, roasted, braised and pureed. Did you know eggplants got their name because 18th century cultivars had white to pale yellow skin, resembling hen eggs? What else is in this week’s bag?

This week’s bag features Roma Tomatoes! The Roma Tomato is a plum tomato. They can be egg or pear-shaped and are generally a good canning or sauce tomato. Smaller plum tomatoes can be closer in size to cherry tomatoes and are sometimes called ‘baby Romas.’ Tomatoes are known for their outstanding antioxidant content, excellent amount of vitamin C and beta-carotene, and high levels of phytonutrients. What else is in this week’s bag?
